Campfire Cooking!!!

I love summer break with my kids, we have no schedule to work around except my husband's work schedule! Camping is always fun, even if it is just the back yard! Ours currently looks like a jungle since our mower broke! Cooking over a fire doesn't have to be just marshmallows and hot dogs on a stick! These packets can be made ahead at home and thrown in the cooler until ready to throw on the fire!




Ingredients 

3/4 lb fresh green beans (trimmed and washed)
1/2 lb red potatoes (quartered)
1 large onion (sliced)
1 lb polish sausage (cut into 1 inch chunks)
1 tsp Olive oil
1 tsp salted butter (melted)
1/3 cup water

Directions

1. Place everything in a large bowl except water, salt and pepper to taste. Toss until everything is coated well.
2. Transfer to a large sheet of heavy duty foil and fold into a pouch folding the edges over to create a seal leaving a small opening.
3. When ready to cook pour water into pouch and seal up small opening. Place over fire (or on prepared grill) for 15 minutes.
4. After 15 minutes turn and cook for another 15 minutes. (or vary time so vegetables are tender and sausage is browned, turning halfway through)
5. Allow to sit for 10 minutes before serving! Use caution with the steam when opening! Enjoy! Serves 4.

P.S.
A few variants to "spice it up"!
* Add 1/3 cup of white wine in place of the water.
* Add other veggies like carrots and celery.
* Add 1 clove of minced garlic and 1 lb diced chicken breast in place of the sausage.
* Add 1/2 lb of peeled and veined jumbo shrimp.
* Sprinkle with shredded cheese when serving!
